Brown Sugar Cinnamon Chip Cookies






























After what seems like a blogging hiatus, I am ready to get back into the kitchen and bake! Anyone else ever feel this way? After a much needed vacation to Cancun, a weekend trip to South Carolina, and a lot of homework, my imagination is overflowing with cupcake, cookie, and other dessert recipes that I want to make.

So much so, that even though I did not have a lot of time tonight, I decided to make these delicious brown sugar cinnamon chip cookies. I picked up a package of cinnamon chips at the store a few weeks ago, and I have been dying to use them in a recipe. I found a recipe that used brown sugar and butterscotch chips, and I decided to substitute my cinnamon chips for the butterscotch. The verdict: melt in your mouth AMAZING!

Since I was a little short on time, and after the recent news surrounding the sale of the Instagram company, you will notice my photos look a little different than usual! I was able to upload the photos to this blog post straight from my phone through the blogger app; oh, how I love technology!

BROWN SUGAR CINNAMON CHIP COOKIES
printable recipes
1 cup all-purpose flour
1/2 cup brown sugar
1/4 cup sugar
1/2 tsp. baking powder
4 tbsp. butter, softened
1 egg
1 tsp. vanilla extract
1 cup cinnamon chips

Preheat oven to 350 degrees F.

Combine all ingredients, leaving out the cinnamon chips, and mix well.

Gently stir in cinnamon chips.

Roll dough into 18 balls and place on cookies sheets.

Bake for 12-15 minutes

Yields 15-18 cookies

Bread Pudding

My whole family was a little disappointed when we discovered the bread we bought for dinner was not up to its usual delicious quality. Expecting a fresh and chewy loaf of Italian bread, we scrunched our noses when we bit into this this dry and crumby bread. As I was making dinner tonight, I realized this bread was going to continue sitting in the bread basket until it got moldy and eventually thrown out. However, before I could let this loaf of bread pitifully go to waste, I decided I would try something new - bread pudding! I found this simple recipe online and whipped up a pan of this home-style comfort dessert.

BREAD PUDDING
10 slices white bread cubed 
5 tbsp. melted butter
1/2 cup raisins
1 tsp cinnamon
5 eggs
3/4 cup sugar
2 tsp. vanilla extract
1/2 tsp. salt
3 cups hot milk

Preheat oven to 375 degrees. 

Cut bread into cubes of desired size. Pour melted butter, cinnamon, and raisins over bread and mix until combined.

In a separate bowl whisk eggs. Stir in sugar, vanilla, and salt. Add hot milk cup by cup, stirring between each addition.

Dump the bread cubes into greased 9x13 pan. Pour egg mixture over the bread cubes.

Bake for 30-40 minutes or until golden brown.

Would be great served warm with vanilla ice cream!

Mini Cinnis

Sorry for the break in posts! My family has been on vacation in South Carolina enjoying the beach, but now we are back and going full speed ahead. Sports have started and after our first cross country practice I came home and made this delicious breakfast for my sister and I. The recipe is from The Baker Chick's Cinnamon Roll Muffins. I used the same recipe, but baked the rolls in two 8 inch circle pans instead of muffin tins. In the future I would like to make these again with a cream cheese frosting. The frosting recipe listed is super simple and fast, but is not as good as cream cheese icing.


CINNAMON ROLL MUFFINS
1 cup milk
1/2 cup brown sugar
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla
1 egg
3 cups flour

FILLING
2 tbsp. butter
2/3 cup brown sugar
1 tsp. cinnamon


ICING
1 cup powdered sugar
2-3 tbsp. milk

Mix brown sugar, baking soda, salt, vanilla, and egg. Add the milk and then the flour. Mix until just combined.

Roll the dough out onto a floured surface, so that it forms a large rectangle that is about 1/4 inch thick. The size of the rectangle will vary, but just make sure the dough is a good thickness.

Spread the dough with room temperature butter and sprinkle with the brown sugar and cinnamon filling. 

Roll the dough into a log and slice into 1 to 2 inch rounds. Place the rolls into a greased 8x8 pan, so that the rolls are almost all touching.

Bake at 375 for 15 minutes or until golden.

Mix the ingredients for the icing and drizzle over warm rolls.
